ZUCCHINI APPLE MUFFINS with HAZELNUTS

Ingredients

Dry ingredients:

  • 1 ¼ oat flour
  • 1 tsp baking soda
  • 2 tsp cream of tartar
  • 1 ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ½ cup chopped hazelnuts
  • pinch of salt

Wet ingredients:

  • ¾ cup grated peeled zucchini
  • ¾ cup grated apples (or apple sauce unsweetened)
  • 2 eggs
  • ½ cup agave syrup
  • 1 tsp vanilla extract

Instructions

  • Mix all dry ingredients well
  • Mix all wet ingredients in a different bowl
  • Add wet mixture into dry, and mix well GENTLY until smoothness
  • Add whole hazelnut on top (optional)
  • Bake for 20 minutes in preheated to 350*F oven
