CHICKEN with BACON, MUSHROOMS, and CHEESE, with CREAMY SPINACH

Ingredients

  • 2 boneless skinless chicken breast halves
  • Salt, pepper
  • 2 tbsp Honey Mustard sugar-free
  • 1 cup white mushrooms, sliced
  • ½ cup shredded cheddar cheese
  • 2 slices of regular bacon, cut into thin strips

For the spinach side dish:

  • 9 oz fresh spinach chopped
  • 1 garlic clove
  • 2 oz cream cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp of whipping cream
  • Salt, pepper

Instructions

  • Preheat the oven to 375*F
  • Cut each chicken breast horizontally to get slices about ½ inch thick. Garnish with salt and pepper.
  • Place slices in a backing form and coat with honey mustard, cheese, mushrooms, and bacon strips on the top.
  • Bake for 25-30 minutes, until bacon is crispy.

For Spinach side dish:

  • Add minced garlic to a preheated skillet with olive oil
  • Stir lover 1-2 minutes
  • Add spinach and cream cheese, and mix to combine them
  • Still in Parmesan cheese and cream
  • Bring to a simmer and cook, stirring for 1 minute. 
  • Add salt and pepper, and serve.
