ASIAN STYLE SALAD WITH SHRIMP

Ingredients

For the salad:

  • 1 cup Edamame beans fresh or unfrozen
  • 1 cup any kind of sprouted greens (peas, broccoli, etc)
  • 1 cup shredded red cabbage
  • 1 cup salad shrimp unfrozen and ready to use

For dressing:

  • 2 tbsp toasted sesame oil
  • ΒΌ cup vinegar
  • 1 tbsp low sodium soy sauce
  • 1 garlic clove minced
  • salt and pepper

Notes

You can sprinkle the salad with roasted peanuts if desired
