Boil cauliflower for 5 minutes or until tender, drain and mash it
Cook scallions and parsley on olive oil until brownish, let it cool and add to the cauliflower
Mix in eggs, salt, pepper, and ½ of almond meal (or sprouted flour)
Form patties with the mashed cauliflower mix, coating them with the rest of the almond meal (or sprouted flour)
Cook on olive oil on a medium heat until golden brown and crispy on both sides.
