COOKIES with chopped PECAN

Ingredients

  • ⅓ cup salted butter at room temperature
  • ⅓ cup crystalline fructose (or ½ cup erythritol)
  • 4 oz cream cheese at room temperature
  • 1 large egg at room temperature
  • 1 tsp vanilla extract
  • 1 ½ cups almond flour
  • ⅓ cup coconut flour
  • 1 ½ tsp baking powder
  • ¾ cup chopped toasted pecans

Instructions

  • Smash butter with fructose using a wooden or silicon spoon
  • Add cream cheese and continue mixing until homogeny texture
  • Add the egg and vanilla
  • Add dry ingredients one after another, continuing mixing
  • Grab the dough using a round spoon, as shown in the video
  • Place on the baking sheets covered with parchment paper
  • Flatтen the balls with the fork if desired
  • Bake at preheated to 350°F (180°C) oven for 16-18 minutes or until edges become brownish
  • Cool completely before transferring to the plate
