BIRTHDAY CAKE no SUGAR no GLUTEN

Ingredients

For cake:

  • 3 large eggs at room temperature
  • ¾ cup agave syrup
  • ½ cup evaporated milk
  • ⅓ cup melted coconut oil
  • 1 tbsp vanilla
  • 2 tsp almond (or Rum extract)
  • 1 ½ cups of almond flour
  • 1 cup of oat flour
  • 1 tsp baking soda
  • 2 tsp cream of tartar
  • pinch of salt

For frosting:

  • 4 oz of Cream cheese
  • 1/3 cup of agave syrup
  • 1 cup of whipping cream
  • 1 tsp vanilla extract

Instructions

  • Preheat the oven to 350ºF.
  • In a medium-sized bowl, whisk eggs, agave syrup, milk, coconut oil, vanilla extract, and almond extract until thoroughly combined and smooth. Set aside.
  • In a bigger bowl, combine the almond flour, oat flour, baking soda, and salt, and mix well.
  • Add the wet ingredients to the dry ingredients slowly, and mix well until combined and smooth.
  • Pour batter into prepared 6-inch cake pan and bake for 25-30 minutes.
  • Meanwhile, bit the frosting ingredients for 5-7 minutes until standing picks.
  • Check the cake in the oven with the wooden toothpick. It should come out dry.
  • Cool it for 15 minutes in the pan.
  • Remove the cake from the pan and cool on a wire rack.
  • Cut into two layers, put frosting, and decorate as shown in the video.
