NICOISE PASTA SALAD

Ingredients

For salad:

  • 1/2 pound of rotini pasta
  • 1/4 pound of green beans
  • 5-oz. can of salmon in water, drained
  • 1 cup cherry tomatoes, cut longwise
  • 4-5 kalamata olives, chopped
  • 1 anchovy
  • ¼ of garlic clove chopped
  • ¼ cup chopped fresh parsley
  • ¼cup chopped basil

For the dressing:

  • 6 tbsp olive oil
  • 2 tbsp red wine vinegar
  • ¼ tsp salt

Instructions

  • Bring a large pot of salted water to boil over high heat.
  • Add pasta and cook until almost tender, about 5 minutes.
  • Cut green beans, as shown in the video.
  • Add green beans to the pot and continue to boil until beans and pasta are al dente tender, about 2 minutes longer.
  • Drain and put aside to cool.
  • Combine tomatoes, salmon, anchovy, garlic, olives, parsley, and basil in a large bowl.
  • Make a dressing by whisking together oil, vinegar, and salt.
  • Add cold pasta with beans to the salad bowl and pour the dressing.
