PORK FAJITAS

Ingredients

  • 1 pork tenderloin
  • 1 medium-sized onion
  • 3 bell peppers of different colors (red, yellow, green)
  • 1 tbsp lime juice
  • olive oil for cooking
  • 1 tsp chili powder
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
  • 1/4 tsp red paprika
  • ½ tsp of salt
  • pinch of cayenne pepper (optional)
  • ezekieltortillas or green lettuce for wraps

Instructions

  • Slice onion and peppers, and set aside.
  • Cut the pork into medallions across the fibers first and then cut them into strips to get tender meat.
  • Cut pork into thin strips and place in a bowl. Toss pork with seasoning, lime juice, and 1 tablespoon olive oil.
  • Preheat 1 tablespoon olive oil over medium-high. Add the pork in small batches and cook about 3-4 minutes. Set cooked pork aside.
  • Add 1 tablespoon of oil to the same pan and cook onions for 1-2 minutes. Stir in peppers and cook for 2 more minutes.
  • Add pork and cook until heated through, but do not overcook. The pork should be a little bit pink inside.
  • If you choose to serve the meal in Ezekiel tortillas, preheat them in a microwave.
