DARK CHOCOLATE TRUFFLES

Ingredients

For truffles:

  • 4 oz chocolate containing more than 70% cocoa
  • 1/4 cup heavy cream
  • 1 tablespoon of orange-flavored liqueur
  • pinch of salt

For dipping:

  • unsweetened cocoa powder with some fructose
  • unsweetened coconut flakes
  • chopped pistachios
  • hazelnut meal

Instructions

  • Chop or grind chocolate and place it in a bowl.
  • Bring heavy cream to a simmer in a small saucepan, but do not boil!
  • Pour the hot cream over the chocolate, and let rest for 2 minutes.
  • Then whisk until smooth
  • Add orange liquor and salt and whisk again
  • Pour the chocolate mixture into a 7.5x5.5-inch glass dish, and refrigerate until chilled. Check every 10 minutes to prevent over-chilling.
  • Using a 1-inch ice cream scoop, scoop balls of the chocolate mixture and roll balls in cocoa powder and other toppings, as shown in the video
