FRIED TOFU on FRESH QUINOA SALAD

Ingredients

  • 1-2 slices of pressed tofu
  • ¾ cup of sesame seeds
  • 1 egg (or ½ cup of milk as used in this video)
  • olive oil for cooking

For salad:

  • 2 cups cooked quinoa (room temperature)
  • one package (6 oz) of fresh spinach
  • 1 cup of red grape tomatoes
  • 1 cup of yellow grape tomatoes
  • 2 cups of small cucumbers
  • 1 orange sweet pepper
  • 1 cup of sliced almonds

For dressing:

  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1tbsp agave syrup (decent substitute to honey used in this video)
  • ½ lemon fresh juice

Instructions

  • Place the spinach and quinoa in a big salad bowl
  • Cut grape tomatoes in halves
  • Slice cucumbers
  • Cut pepper into thin strips
  • Add sliced almonds
  • Make a dressing: mix all listed ingredients, pour over the veggies, and mix gently with a big spoon
  • Cut tofu into 2-4 slices as desired
  • Deep in beaten egg, or whole milk (like shown in the video)
  • Deep in sesame seeds covering from all sides
  • Fry tofu slices in olive oil until golden-brownish crust
  • Place tofu on top of the salad
