CHICKPEAS HUMMUS

Ingredients

  • 1 can (15oz) chickpeas or 1.5 cup cooked chickpeas
  • ¼ cup fresh lemon juice (1 lemon)
  • 1 small garlic clove, minced
  • ¼ cup well-stirred tahini
  • 2 tbsp extra virgin olive oil
  • ½ tsp cumin
  • ½ tsp salt
  • 2-3 tbsp water
  • dash of ground paprika

Instructions

Step 1

  • In a food processor, combine tahini and lemon juice for 60-90 seconds

Step 2

  • Add olive oil, garlic, cumin, salt to process for 1 minute
  • Add half of the chickpeas and process 1 more minute
  • Add the rest of the chickpeas and process until thick and smooth for 1-2 minutes
  • Add water if the hummus is still too thick
