COCONUT ALMOND MACAROONS

Ingredients

  • ½ cup Almond Flour
  • 1 ¾ cup unsweetened coconut flakes
  • 4 eggs (we’ll need whites only)
  • 5 tbsp fructose or erythritol

Instructions

  • Mix almond flour with coconut flakes in a big salad bowl
  • Separate white from yolks, placing whites in a big bowl
  • Beat whites with an electric mixer until soft peaks form
  • Continuing beating, start adding fructose gradually, as shown in the video
  • Beat the whites until stiff peaks form and tips stand straight, which takes about 4 to 5 minutes
  • Start adding the whites mixture to the dry mix, stirring gently with a whisk until getting homogeny mixture
  • Using a small ice cream spoon, grab little balls and place them on a baking sheet covered with the baking paper
  • Bake 25 min in preheated to 325*F oven, or until they become goldish
  • Let cool completely, and then transfer to a serving plate
