CRAB CAKES

Ingredients

  • 1 pound of Crab Meat
  • 1 egg
  • 1 lemon
  • almond meal for coating
  • olive oil for cooking
  • box of mixed greens
  • parmesan cheese slices

For the sauce:

  • ½ cup sugar-free mayonnaise
  • 1 tsp of Dijon mustard
  • 1.5 tbsp chopped fresh parsley
  • 1.5 tbsp chopped scallions
  • Old Bay seasoning
  • salt & pepper

Instructions

  • Mix all the ingredients of the sauce
  • In a separate bowl, mix crab meat and the egg
  • Add ½ of the sauce to the bowl and mix well until combined
  • Form small patties, coating them in an almond meal like shown in the video
  • Cook on olive oil in a preheated skillet on a medium heat
  • Place greens in a big serving plate
  • Grate parmesan into wide thin slices
  • When crab cakes are cooked from both sides, transfer them to the plate over the greens
  • Squeeze juice out of half of the lemon into the sauce, mix well
  • Serve greens with cheese and a crab cake with the sauce
