HEALTHY COOKIES FOR SANTA

Ingredients

  • 1 big sweet apple
  • 2 cups of oats
  • 1.5 cups Almond meal
  • ¼ cup fructose
  • ¼ tsp salt
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1 tbsp apple vinegar
  • 5 tbsp vegetable oil
  • sliced Almonds and more cinnamon for topping

Instructions

  • Grate the apple on a big grader
  • Add first 5 dry ingredients, mix well
  • In a cup, add apple vinegar to a baking soda which will create bubbles and foam
  • Add vegetable oil into the cup
  • Start adding liquid to a dry mixture, stirring gently, until getting firm texture
  • Using an ice cream scoop, place the dough balls on a baking sheet covered with baking paper. Keep 2 inches distance between balls.
  • Sprinkle with cinnamon, and place several almond slices on top as shown in the video
  • Bake in preheated to 350*F oven for about 15 minutes
  • Cool completely before transferring to a plate
