BUCKWHEAT WITH EGGPLANTS

Ingredients

  • 1 cup buckwheat
  • 2 cups of water
  • 1 eggplant
  • salt
  • olive oil for cooking

Instructions

  • Boil buckwheat in 2 glasses of water for about 6 minutes. Turn off the heat and leave it covered with a lid.
  • Cut the eggplant into thin slices, fry in olive oil on both sides, season with salt
  • Place buckwheat on a plate and put cooked eggplant on top of it. Pour over the olive oil from the skillet.
