MUSHROOM EGG CUPS AND FRIED CHEESE

Ingredients

  • 2 boxes (8 oz each) of fresh Oyster mushrooms
  • 1 sweet onion
  • ½ cup of dry white wine
  • 2 full tbsp of sour cream
  • pinch of salt, black pepper, and nutmeg
  • 4 eggs
  • fresh or dry thyme (optional)
  • cheese for frying
  • olive oil for cooking

Instructions

  • Cut the onion into ¼ rings and cook on olive oil until golden
  • Take of mushroom stems. Cut mushrooms into long thin pieces.
  • Add mushrooms to cooking onions and mix
  • Add white wine, salt, pepper
  • Cook for 2-3 minutes
  • Add sour cream and nutmeg, mix and remove from the heat
  • Distribute between four individual forms as shown in the video
  • Sprinkle with thyme (optional)
  • Cook in a toaster oven at 370*F
  • Cut cheese into 1/3 inch thick slices
  • Preheat a skillet on medium heat, sprinkle with olive oil, and fry cheese for about 1 minute on each side
  • Serve with olives, marinated peppers, or (and) green salad
