OATMEAL BLUEBERRIES MUFFINS

Ingredients

  • 1 3/4 cups oat flour
  • 1/4 tsp salt
  • 3/4 cup fructose
  • 1 cup Greek yogurt or any plain yogurt
  • 1 1/2 tsp baking soda
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups of blueberries

Instructions

  • Preheat the oven to 350F. Grease and line a 12-count muffin pan with muffin liners and set aside.
  • In a mixing bowl, mix well the flour, fructose, and salt
  • In another bowl, mix yogurt with soda and wait 1-2 minutes until the mixture becomes light and fluffy
  • Add all other wet ingredients and mix until combined
  • Add blueberries and mix again very gently
  • Pour wet mixture into dry ingredients bowl and mix until well combined
  • Distribute the batter evenly between the 12 muffin liners
  • Bake the muffins for 20-23 minutes, or until a skewer comes out mostly clean
  • Remove the muffins from the oven and let them cool in the pan for 10 minutes
  • Transfer carefully to a wire rack to cool completely

Notes

DO NOT wash blueberries before making muffins. They should be dry.
