Cut plums into four pieces, removing the seeds
Heat wine in a deep pan, add plums, fructose, and cinnamon
Boil on low heat for 2-3 minutes
Meanwhile, beat 2 whites until light and fluffy. Then start adding fructose continuing beating until firm texture as shown in the video.
Add almonds and mix very gently
Transfer plums to a baking dish, leaving liquids in the pan
Cover with a whites-almonds mixture
Bake 10 minutes in a preheated to 350*F oven until the topping gets golden color
