Mix all ingredients in amedium bowl and beat well until well combined. The batter may look too liquid,but oatmeal flour will swell.
Leave the batter at room temperature for at least 15-20 minutes
Meanwhile, mix the stuffing ingredients, and make a sauce, as shown in the video
Before cooking, beat the batter again. Add some water if it is too thick or some oatmeal flour if it is too liquid.
Cook oatmeal crepes in a small non-stick frypan, over high and then medium heat, about 1 minute on each side or until golden brown
Notes
Since there is olive oil in a batter, crepes should not stick to a pan. However, I recommend sprinkling a pan with a bit of olive oilbefore cooking the first one.
