CHICKEN THIGHS WITH VEGETABLES

Ingredients

  • 3 boneless chicken thighs
  • 1 bunch of scallions
  • 4 celery sticks
  • 1 red pepper
  • 6 Bella mushrooms
  • 1 cup of raw cashews
  • olive oil for cooking
  • 1 tbsp of toasted sesame oil
  • 1 tbsp of soy sauce low sodium

Instructions

  • Cut scallions and add to a preheated skillet with olive oil
  • Cut chicken thighs and add to a skillet with scallions. Cook meat, mixing periodically. Add olive oil if necessary.
  • Cut celery, red pepper, and mushrooms
  • When the meat is almost ready, start adding vegetables like shown in the video
  • Add salt and pepper to taste
  • Add cashews, soy sauce, and sesame oil
  • Mix and cook for 2 more minutes to let flavors combine
