MUSHROOMS STUFFED WITH SHRIMPS

Ingredients

  • 6 Bella (or Portobellini) mushrooms
  • 4 oz (110g) of yellow cheese (Monterey, Cheddar)
  • 18 cooked salad shrimps
  • 2 garlic cloves
  • 3-4 tsp of Mayonnaise (sugar-free)
  • salt, black pepper, thyme

Instructions

  • Clean mushrooms with the wet paper towel
  • Remove stems
  • Place caps on a baking sheet
  • Salt cups inside and place ½ tsp of mayo into each mushroom cap
  • Cut stems into small pieces and cook them on olive oil for a couple of minutes
  • Cut or press garlic, add to cooked stems, and salt the mixture
  • Distribute the mixture between 6 mushroom cups
  • Add 3 salad shrimps into each cup, sprinkle with salt and black pepper
  • Grate cheese on a big grader
  • Place and press about 1 tbsp of cheese on each mushroom cap, as shown in the video
  • Sprinkle with thyme
  • Bake in a preheated to 430*F (220*C) oven for 10 minutes
