ALMOND OATMEAL COOKIES WITH DARK CHOCOLATE

Ingredients

  • 1 stick (113 g) of soft butter (or margarine)
  • ½ cup fructose
  • 2 cups of oatmeal flour
  • 1 cup of almond flour
  • 1 egg
  • 1 tsp of baking soda
  • 1 cup of 70% dark chocolate chips
  • whole oatmeal for covering

Instructions

  • Mix all ingredients except the whole oatmeal
  • Make a cylinder about 2 inches in diameter, roll it in wax paper and keep it in a freezer for at least for 3 hours, or until you are ready to make cookies
  • Cut the cylinder into ½ inch thick pieces
  • Roll in whole oats and form cookies
  • Place on a baking sheet covered with a baking paper
  • Bake in preheated to 375*F oven for 15-16 minutes
  • Let cool and transfer to a plate
