CRANBERRY JELLY

Ingredients

  • 2 bags (12oz each) of cranberries
  • 1.5 cups of crystalline fructose (or another sugar substitute)
  • 1.5 cups apple cider
  • 1 cinnamon stick
  • 5 whole cloves
  • 1.5  cups of water, divided
  • 2 envelopes (about 4.5 tsp) gelatin

Instructions

  • Mix and boil the first five ingredients and 1 cup of water
  • Heat on high until boiling
  • Reduce the heat to simmer and cook 15 minutes, occasionally stirring, until cranberries burst. Remove and set aside
  • Dissolve gelatin in 0.5 cup of cold water, stir well, let sit for 5 minutes
  • Strain cranberries mixture through the fine-mesh pressing on the solids with a spatula
  • Whisk in gelatin mixture and mix well until it dissolves completely
  • Pour into a loaf pan covered with plastic wrap
  • Refrigerate at least overnight or 2-3 days
  • Before serving, place a suitable shape dish over the loaf pan, turn it upside down, and remove the plastic
