CHICKEN WITH PORTOBELLO MUSHROOMS AND CHEESE

Ingredients

  • 1 chicken breast
  • 1 onion
  • 1 big Portobello
  • ¼ pound of Romano cheese
  • salt, black pepper
  • olive oil for cooking

Instructions

  • Cut onion into rings and cook in olive oil until golden brown. Add somesalt and pepper, remove from the pan, and set aside
  • Cut Portobello into long slices and cook in the same skillet for 30-40 sec each side. Add some salt and pepper remove from the pan, and set aside
  • Cut chicken breast into ½ inch thick slices, and cook in the sameskillet for 1-2 minutes each side, until crust is created
  • Arrange chicken in a baking pan. I used a round pie pan in this video
  • Place about 1 tbsp of onion on each slice
  • Place 1-2 Portobello slices on top
  • Grate the cheese and sprinkle with it each slice
  • Bake 10-12 minutes at 375*F
  • Serve with any fresh salad of your choice or with vegetable sauté
