PORK ROULADE WITH GREEN STUFFING
Ingredients
1 pork tenderloin
3 cloves finely chopped or minced garlic
5 tbsp chopped parsley
2 tbsp oregano leaves stripped from the stems and chopped
1 tbsp chopped rosemarie
2-3 slices of prosciutto
salt and freshly ground black pepper
Instructions
Slice the tenderloin in half lengthwise
Salt and pepper from both sides
Mix the greens and garlic
Spread the green filling down the center
Fold the meat over the filling
Wrap with prosciutto slices
Tie with a butcher string
Heat the heavy skillet
Cook on olive oil from all sides until brownish
Transfer to a baking sheet or Pyrex form
Bake 35-40 minutes at 375*F (190*C)
Notes
Add fresh salad or vegetables sauté as a side dish.
