YELLOW SQUASH FRITTATA
Ingredients
1 medium size yellow squash pilled and cut into small strips
2-3 scallions
4 eggs
4 oz yellow cheese (Swiss, Monterey, Cheddar)
Salt, pepper
Dash of nutmeg
Dash of baking powder
Olive oil for cooking
Instructions
Cut scallions and cook on olive oil for about a minute
Add squash and continue cooking, stirring occasionally for 2-3 more minutes
Transfer to a salad bowl
Add eggs, salt, pepper, nutmeg and baking powder
Divide into individual dishes
Sprinkle with grated cheese
Bake in а toasteroven at 350*F (160*C) for about 15 minutes, or until cheese is melting and getting goldish
Notes
Makes 2-4 individual dishes depending on the size
