YELLOW SQUASH FRITTATA

Ingredients

  • 1 medium size yellow squash pilled and cut into small strips
  • 2-3 scallions
  • 4 eggs
  • 4 oz yellow cheese (Swiss, Monterey, Cheddar)
  • Salt, pepper
  • Dash of nutmeg
  • Dash of baking powder
  • Olive oil for cooking

Instructions

  • Cut scallions and cook on olive oil for about a minute
  • Add squash and continue cooking, stirring occasionally for 2-3 more minutes
  • Transfer to a salad bowl
  • Add eggs, salt, pepper, nutmeg and baking powder
  • Divide into individual dishes
  • Sprinkle with grated cheese
  • Bake in а toasteroven at 350*F (160*C) for about 15 minutes, or until cheese is melting and getting goldish

Makes 2-4 individual dishes depending on the size
