Yellow Squash Pancakes

Yellow Squash Pancakes are great for weekend breakfast or lunch. Add a green salad, and you’ll have a light dinner too!

 

Ingredients

  • 2 yellow squashes
  • ½ bunch of scallions
  • ½ bunch parsley (or cilantro)
  • ½ bunch dill
  • 4 eggs
  • ½ pound (8oz) of 0% fat Greek yogurt
  • Salt, pepper
  • 1/2 tsp baking powder
  • 1 cup oatmeal flour
  • Olive oil for cooking

Directions:

  • Peel squashes and grate them on coarse grader
  • Cook chopped scallions on olive oil until soft and dark green
  • Chop parsley and dill
  • Mix all the ingredients, and let the mixture to blend for an hour in a warm place
  • Using olive oil, cook for 2-3 minutes each side on a medium heat.

  • Glycemic Index of oatmeal flower is medium (40)
  • There is no saturated fat in this recipe
  • You can eat them as they are, or with 0% Greek yogurt
  • Avoid adding sour cream or butter
