Oatmeal Mini-Pancakes. Plain or with Blueberries.

Isn’t it great to relax on a porch having a good breakfast or a healthy snack? Any weekend, when you have more time for relaxation and for cooking, try these Oatmeal Mini Pancakes. If you’d like, make two kinds of them – the plain ones and with blueberries. Both are healthy and yummy!

Ingredients:

  • 2 eggs
  • 1 cup 0% Greek yogurt
  • 2 tsp pure fructose (or Splenda®)
  • Pinch of salt
  • ½ Active Dry Yeast® of 5/16 oz.
  • ¼ tsp baking powder
  • ½ – ¾ cup oatmeal flour, to reach optimal consistency
  • Olive oil for cooking

Directions:

  • Mix all the ingredients and leave the batter in a warm place for 20-30 minutes.
  • Divide into 2 parts. Add 1/3 cup of blueberries in one part.
  • Cook them on a medium heat with olive oil.

Weight Loss Help

  • Oatmeal flour itself has medium Glycemic Index 
  • You can serve aside 0% Greek yogurt or/and 100% fruit jam, or/and fresh berries.
  • Food to AVOID:
    • High GI carbs: honey, maple and other syrups, regular jams with sugar.
    • Saturated fats:  butter, sour cream or whipped cream
