LOW FAT Meatballs

Project Description

MEATBALLS is an internationally favorable meal. Adults, kids, students (and pets!) like this simple and cozy entree. Great for a party, lunch or dinner. Super yummy with an ARUGULA-RADICCHIO or KALE salads (take a look at those pages too)

Low-Fat Meatballs

For meatballs
  1. 1 pound ground beef (1/2 kg)
  2. 1 pound ground chicken
  3. 1 egg
  4. 1 chopped onion
  5. 1 tbsp finally chopped or dried parsley
  6. 1 tbsp finally chopped or dried oregano
  7. Salt & Pepper
For sauce
  1. 1 big onion chopped
  2. 1 pound fresh tomatoes, pilled and chopped
  3. 4 tbsp tomato paste (no sugar added)
  4. 0.5 cup water
  5. 0.5 cup dry red wine
  6. 1 garlic clove
  7. 1 bay leaf
  8. Salt, black pepper
  9. 2 tbsp olive oil for cooking
Meatballs
  1. Mix and form small, about 1 inch, balls
  2. Boil the water
  3. Place meatballs in the water and cook for 5-7 minutes
  4. Drain, discard the water
Sauce
  1. Cook onion in olive oil using a deep heavy skillet
  2. Add tomatoes and cook for another 5 minutes, steering with a wooden spoon
  3. Add all other ingredients, continue cooking and steering
Final step
  1. Place meatballs into the tomato sauce and cook for 10 more minutes
  2. Sprinkle with fresh greens
Notes
  1. • This meal doesn’t contain any bad carbs
  2. • GI of tomatoes and herbs is very low, only 15
  3. • Boiling meatballs before placing them in a sauce helps to get rid of the majority of fat (you’ll be surprised by the amount of fat in the water)
  4. • You can also make meatballs using just one kind of meat: beef, chicken, or turkey
