Dark Cocoa and Orange Cakes

Simple and delicious dessert. Blending dark chocolate with orange creates a marvelous flavor and a deep color. If you decorate them with 0% thick Greek yogurt, you’ll get Dark-Scary-BOO-Dessert for Halloween party. :0

Ingredients

  • 1 cup of oatmeal flour
  • 1 cup of almond meal
  • 1/2 cup pure fructose
  • 1 teaspoon baking powder
  • 1/2 cup vegetable oil
  • 3 eggs, beaten      
  • 1 orange chopped with zest
  • 3 tbsp baking cocoa

 Directions

  • Preheat oven to 350* F (175* C).
  • Grease small baking forms.
  • Mix together all ingredients in the order listed above
  • Fill prepared forms with batter to 2/3 
  • Bake 40-45 minutes, or until a toothpick inserted into cake comes out clean

Weight Loss Help

  • High Glycemic Index (100) sugar substituted with pure fructose (20)
  • White wheat flour (85) – with Low Glycemic Index  Almond Meal (15) and oatmeal flour which Glycemic Index is Medium (40)
  • There is no saturated fat in this recipe
  • If you want to add more sweetness, serve them with 100% fruit jam
