Green Beans Salad with Ham and Eggs

Green Beans Salad with Ham and Eggs

This salad, in addition to its veggie components, contains proteins. Eggs and ham added to a salad make it richer, so it satisfies your appetite better. The salad is good either for an energy-restoring lunch or for a light nutritional dinner.

Ingredients:

  • ½ pound frozen green beans, boiled for 2-3 minutes and cooled
  • 2-3 marinated pickles cut into thin 1 inch long strips (please do not replace them with regular salty pickles, the outcome will be different)
  • ¼ of medium-size sweet onion, cut into half-rings and rinsed with cold water
  • 1/3 pound smoked turkey ham cut into thin 1 inch long strips

On top:

  • 2 hard-boiled eggs cut into 4 pieces
  • 5-8 cherry tomatoes cut in halves

Dressing:

  • 1 garlic clove
  • 1/3 tsp black pepper
  • ½ tsp red paprika
  • ¼ tsp of pure fructose or Splenda®
  • 6-7 tbsp of olive oil
  • 3 tbsp of 5% vinegar
  • ¼ tsp kosher salt
  • ½ tsp Dijon mustard (do your best to find a sugar-free mustard)

Gently stir all the ingredients and place into a serving salad dish. Place eggs and cherry tomatoes on top. Mix and slightly bit the dressing ingredients. Pour the dressing over the salad right before serving.
