Avocado Salad

Avocado Salad

Nothing really special. Very simple, easy, healthy and delicious avocado salad. Good for lunch or dinner.

Ingredients:

  • 2 avocado
  • 1 tbsp fresh lemon juice
  • 1 cup of any greens (green lettuce, arugula, spinach)
  • 1/4 pound white feta cheese
  • 2 hard boiled eggs
  • 1 raw carrot
  • Salt and fresh ground black pepper
  • 2 tbsp of Dipping olive oil for dressing 

Directions:

  • Cut avocado longwise and sprinkle with the lemon juice. Cut all other ingredients and arrange them on a plate.
  • Sprinkle with salt, pepper and olive oil.
