ZUCCHINI LATKES

Celebrating Hanukkah is all about eating. Also called a Festival of Lights, it refers to the miracle of one-day oil supply marvelously burning and giving light for eight nights. That’s why, it associated with foods fried in oil, and traditionally, people make potato latkes.

Replacing High GI potatoes with Low GI zucchini, we’ll get a traditional Hanukkah meal, modified in a healthy way.

Ingredients: 

  • 3 grated zucchini
  • ½ cup of 0% fat Greek yogurt
  • 3 eggs
  • ½ tsp baking powder
  • ½ tsp of salt
  • About 2/3 cup of oatmeal flour (to get a “sour cream texture”)

Directions:

  • Grate zucchini on a big grater, press them a little bit to remove the juice.
  • Add all other ingredients and stir well. Let mixture stand for at least 30 minutes. You can also keep the batter in a refrigerator for up to 6-8 hours and cook latkes later.
  • Preheat a pan on medium heat. Take one tablespoon of the batter and cook it on the olive oil for about 1-2 minutes on each side.
  • Serve warm with 0% Greek yogurt (if desired), or just as they are.
